This easy homemade vegetable mix is something I make when I want a quick, flavorful side dish. It’s comforting, spicy, and fresh — something you can whip up with just a few ingredients at home. The mustard oil gives it that classic Nepali kick, and the sesame-flax mix adds a nutty depth. I don’t even have a name for it, but it always brings that “Mitho Xa” feeling to the table.

Ingredients
- • 2–3 medium potatoes, boiled and chopped
- • 1 large red onion, thinly sliced
- • 2 cloves garlic, finely chopped
- • 1 small cucumber, diced
- • 2 green chilies, chopped (adjust to your spice level)
- • A handful of fresh coriander, chopped
- • Juice of half a lemon
- • 1 tsp red chili powder
- • 1 tbsp sesame seeds
- • 1 tbsp flax seeds
- • 2 tbsp mustard oil (or any preferred oil)
- • 1/4 tsp turmeric powder
- • Salt to taste
Instructions
- 1. In a dry pan, lightly toast the sesame and flax seeds. Let them cool, then grind them into a coarse powder.
- 2. In a mixing bowl, combine chopped onion, garlic, cucumber, green chilies, lemon juice, chili powder, salt, and coriander.
- 3. Add the boiled and chopped potatoes. Gently mix everything together.
- 4. Heat mustard oil in a small pan. Once hot, turn off the flame, add turmeric, and immediately pour the oil over the mixture to release its aroma.
- 5. Sprinkle the ground sesame-flax mix and toss everything together.
- 6. Taste and adjust salt or lemon as needed.
- Serving Tip:
- Best enjoyed fresh, but also tastes great after a few hours when the flavors have settled in. Great with rice, roti, or just on its own!
